Beans Roasted Slowly
Most great things take time. Our beans are slow roasted in our custom made woodfired roaster fuelled by a select blend of Ironbark, Yellow box and Mahogany speciality wood. The heat derived has a higher moisture content resulting in a coffee that is low in acidity and bitterness with a delicate balance of full body and flavour.


The process is unlike cooking with a wood fired oven or grill, where the smoke from the wood imparts a flavour to the final product, the key benefit here is being able to roast for longer at a lower temperature directly resulting in a final product which is lower in acidity and higher in body.
Where a conventional gas roaster usually takes around 20 minutes our wood roasts will take up to 50 minutes, the natural humidity within the wood envelops the beans during the process which preserves the natural lipids within allowing significantly more natural oil to be preserved in the bean itself.


Although there are quicker and far less costly processes available than wood roasting, the truth is we pride ourselves on taking the time to do things with a little less haste insuring that not only do we source the very best quality beans we also maximise there potential at a roasting level. The result is an exceptional product that we are proud to dedicate ourselves to.
